Apple and Carrot Sambal

Crunchy and slightly tangy. This apple and carrot sambal is the perfect side with your next curry.

Cooks: 20 minutes   Serves: 4   Level: Easy

Ingredients

  • 2 carrots, peeled and grated
  • 1 green chilli, finely sliced
  • 15ml (1 tablespoon) lemon juice
  • 15ml (1 tablespoon) vinegar
  • 10ml (2 teaspoons) sugar, or to taste
  • 3 small green apples, grated
  • 2.5ml (½ teaspoon) salt

Method

  • Add all the ingredients, except the apples and salt, to a small mixing bowl.
  • In a separate small bowl, add the salt to the apples and set aside for 15 minutes.
  • Allow the salt to draw out the excess moisture in the apples.
  • Squeeze out the excess moisture from the apples, before adding it to the rest of the ingredients.
  • Mix well and refrigerate until ready to serve.
  • Serve cold.

Garnish

  • with extra sliced green chilli and red chilli flakes

Serve

  • perfect with any curry of choice
