Apple Fritters

The story …

Add a touch of sweetness to your breakfast or brunch with these warm and crispy little fritters. A few days ago I shared some images of these bite-sized apple fritters on the Facebook Page and on Instagram. They are seriously yummy, so I thought I’d share the recipe too!

Instead of icing sugar, you can also dust these fritters with cinnamon sugar, or drizzle them with a basic white glaze or a delicious caramel sauce. It’s such a great breakfast treat to serve your family during the upcoming colder months. Perfect with a steaming cuppa!

The recipe …

Cooks: 45 minutes   Serves: 24 fritters   Level: Easy

Ingredients

  • Cooking oil, for deep frying
  • 500ml (2 cups) self-raising flour
  • 15ml (1 tablespoon) sugar
  • 2.5ml (½ teaspoon) salt
  • 80ml (⅓ cup) water
  • 160ml (⅔ cup) milk
  • 2 eggs, beaten
  • 10ml (2 teaspoons) vanilla essence
  • 15ml (1 tablespoon) cooking oil
  • 250ml (1 cup) apples, peeled and diced
  • Icing sugar, for dusting

Method

  1. Heat enough cooking oil in a deep-fryer or pot.
  2. In a large mixing bowl, mix the flour, sugar and salt.
  3. Add the water, milk, eggs, vanilla essence and oil to the dry ingredients.
  4. Mix well, then add in the apples.
  5. Drop spoonfuls of the batter, about 15ml, into the hot oil.
  6. Deep-fry until golden brown.
  7. Remove with a slotted spoon and drain on a paper towel.
  8. Dust with icing sugar.
  9. Serve warm.

Serve

  • perfect on its own or dipped in Greek yoghurt topped with honey or granadilla pulp

Garnish

  • with icing sugar, cinnamon sugar, glaze or caramel sauce
