Trying out Mauricia’s Mince Curry soon? Then try this chunky cucumber and banana raita recipe. It’s an easy, cooling-on-the-palette complement to the warm and spicy curry. Normally, I would grate the cucumber and banana, but I’ve left it chunky for added texture and crunch.
Cooks: 15 minutes Serves: 1½ cups Level: Easy
Ingredients
- ½ English cucumber, cored and sliced into half moons
- 1 large banana, halved lengthwise, and sliced into half moons
- 1.25ml (¼ teaspoon) lemon juice
- 1.25ml (¼ teaspoon) ground cumin
- 1.25ml (¼ teaspoon) red chilli flakes
- 30ml (2 tablespoons) plain yoghurt
- 15ml (1 tablespoon) mayonnaise
- Pinch of salt
Method
- Place the sliced banana in a mixing bowl and coat with the lemon juice.
- Add the sliced cucumber and the spices.
- Mix the yoghurt and the mayonnaise in a separate small mixing bowl.
- Now add it to the rest of the ingredients, making sure to coat all the ingredients well.
- Add the salt to taste.
- Transfer to a serving bowl or dish.
- Serve cold.
Serve
- as an accompaniment to curry, biryani or anything hot and spicy
Bon appétit
