Chunky Cucumber and Banana Raita

Trying out Mauricia’s Mince Curry soon? Then try this chunky cucumber and banana raita recipe. It’s an easy, cooling-on-the-palette complement to the warm and spicy curry. Normally, I would grate the cucumber and banana, but I’ve left it chunky for added texture and crunch.

Cooks: 15 minutes   Serves: 1½ cups  Level: Easy

Ingredients

  •  ½ English cucumber, cored and sliced into half moons
  • 1 large banana, halved lengthwise, and sliced into half moons
  • 1.25ml (¼ teaspoon) lemon juice
  • 1.25ml (¼ teaspoon) ground cumin
  • 1.25ml (¼ teaspoon) red chilli flakes
  • 30ml (2 tablespoons) plain yoghurt
  • 15ml (1 tablespoon) mayonnaise
  • Pinch of salt

Method

  1. Place the sliced banana in a mixing bowl and coat with the lemon juice.
  2. Add the sliced cucumber and the spices.
  3. Mix the yoghurt and the mayonnaise in a separate small mixing bowl.
  4. Now add it to the rest of the ingredients, making sure to coat all the ingredients well.
  5. Add the salt to taste.
  6. Transfer to a serving bowl or dish.
  7. Serve cold.

Serve

  • as an accompaniment to curry, biryani or anything hot and spicy
