Nectacot Square Tarts

The story …

Craving for a dessert or a little treat with afternoon tea? These fruity tarts are super convenient to make and best of all, require very little ingredients. Instead of nectacots, you can also use nectarines, peaches or plums.

If you’ve tried and enjoyed my Apple Turnovers, then you’ll love these little square tarts. You can also drizzle some glaze over the tarts by whisking 125ml (½ cup) icing sugar and 15ml (1 tablespoon) egg white.

Ridiculously easy!

The recipe …

Cooks: 30 minutes   Serves: 8 square tarts   Level: Easy

Ingredients

  • 1 x 400g (1 sheet) puff pastry
  • 1 egg, whisked
  • 30ml (2 tablespoons) castor sugar
  • 4 nectacots, stoned and sliced

Method

  1. Preheat the oven to 180°C.
  2. Roll out the sheet of puff pastry on a floured surface to about 4mm thick.
  3. Cut the sheet into 8 equal squares.
  4. Score a 1cm border around each square with a knife, being careful not to cut all the way through the pastry.
  5. Using a fork, pierce the inside of the square to prevent it from rising.
  6. Place the squares on a lined baking tray and brush the tops with the whisked egg.
  7. Sprinkle each square with the castor sugar and top the centre with the sliced nectacots.
  8. Bake for 15 minutes or until golden brown.
  9. Set aside to cool on a wire rack.
  10. Once the pastries have cooled, sprinkle with some icing sugar, or decorate with the glaze.

Garnish

  • with mint leaves and icing sugar

Serve

  • with a scoop of vanilla ice cream or a dollop of whipped cream
